Some passions begin with curiosity and, over time, become a family story. The story of Birra di Fiemme began in 1999, when Stefano Gilmozzi decided to bring an old brewing tradition back to the valley and turn it into a new way of telling the story of his homeland.

This is how Birra di Fiemme was born, in the heart of the valley that gives it its name. An artisanal beer created from the desire to rediscover traditional knowledge and reinterpret it through quality ingredients, research and passion. Stefano had discovered the world of brewing during his experiences in South Tyrol and Germany, where he learned about brewing techniques, styles and the secrets of master brewers. Back in Val di Fiemme, he chose to make those experiences the starting point for a story of his own.

What began as a small adventure gradually grew alongside the family. Luisa, Michele, Stefania and Francesca each joined the business, bringing different skills and perspectives and turning the brewery into a truly family-run project. Today, Birra di Fiemme is an agribrewery bringing together a farm, a brewery, an agriturismo and a shop, all sharing the same philosophy.

The connection with the land has become increasingly tangible over the years. The family grows its own barley and hops and follows practices designed to support biodiversity and environmental balance, with the ambition of keeping an ever-closer connection with its raw materials. The brewing process follows the same approach: research, respect for tradition and attention to every detail.

Birra di Fiemme is unpasteurised and contains no preservatives or stabilisers, a deliberate choice that helps preserve the beer's character and natural qualities. From the classic Fleimbier, Larixbier and Weizenbier to special and seasonal creations, the range reflects the family's curiosity and desire to experiment while remaining rooted in tradition.

There is Fleimbier, the first beer created in 1999, fresh and easy-drinking; Larixbier, inspired by the Dunkel beers Stefano discovered during his training in Bavaria; and Nòsa, created from the desire to revive the memory of beers once brewed in Predazzo, reinterpreting that heritage through a contemporary perspective.

But above all, there is one clear idea: to make beer as a way of telling a story. A story of mountain water, raw materials, family, local heritage and the curiosity that has continued to drive this small yet remarkable adventure since 1999.

Quelle legate al territorio: Lupinos (con lupino di Anterivo), Nòsa (antica ricetta fiemmese), Natale (per i dolci delle feste), Kellerbier

Inoltre produciamo una speciale acquavite dal nome Zirmo (acquavite aromatizzata al Cirmolo di Fiemme)
