Pasta begins with two essential ingredients: flour and water. And yet, behind these seemingly simple elements lies an entire world. The land where the wheat grows, the climate, the seasons, the people who cultivate it and, finally, the hands of those who know how to turn it into pasta.
This is the idea behind Monograno Felicetti, the range that best expresses Pastificio Felicetti's commitment to the quality of its raw materials. Each pasta is made from a single variety of wheat, grown in a specific territory and processed on its own, preserving its individual character and bringing something of its place of origin to the plate.
To this careful selection come the water of the Trentino mountains and the pure air of the Dolomites, together with more than a century of pasta-making expertise. The result is a pasta that reveals its character even as it enters the boiling water: through its aroma, its texture, its ability to embrace a sauce and, above all, through the personality of each individual grain.
The Monograno collection begins precisely here: with the diversity of wheat.
There is Matt, made from durum wheat grown in Puglia, where the sun and the land help shape its bold, intense character. A full-flavoured pasta that can stand up to richer dishes while being equally enjoyable in simpler recipes.
Then there is Khorasan, under the Kamut® brand, an ancient variety of wheat that comes from Saskatchewan, Canada. It brings a long history and a more delicate aromatic profile, inviting you to discover hints of nuts and softer, more subtle notes.
Farro dicocco, or emmer, comes from Umbria and is perhaps the variety most closely connected to the ancient history of grain cultivation: rustic, honest and distinctive. A pasta that brings the authentic character of this ancient cereal to the plate.
And then there is Il Cappelli, a durum wheat variety grown in the Murge area of Puglia and the latest addition to the Monograno family. An unmistakably Italian wheat with a vigorous character, completing a collection built around the idea that grains, territories and harvests can all express something different.
Four grains, but above all four stories of different places. Choosing Monograno is also a journey: from Puglia to Canada, from Umbria back to Puglia's Murge, before returning to Trentino, where these ingredients are carefully transformed into pasta while preserving their identity.
