Fior di Primiero
Delicate, creamy and smooth: a young cheese that captures the character of Primiero in both its name and flavour
Some cheeses need time to tell their story. Fior di Primiero, on the other hand, begins to tell its story after just 30 days of ageing, when its soft texture and sweet flavour still preserve all the freshness of the milk.
Produced by Caseificio di Primiero using whole cow's milk that has been thermised, it is made through a gentle heating process at temperatures lower than those used for pasteurisation. This allows part of the milk's natural bacterial flora to be preserved, together with some of the original characteristics of the raw ingredient.
One of its most distinctive features is its bloomy rind, the characteristic white surface reminiscent of traditional French cheeses such as Brie. It is formed by noble moulds and is completely edible: there is therefore no need to remove it, as it can be enjoyed together with the soft, creamy paste inside.
On the palate, Fior di Primiero is sweet and delicate, with pleasant notes of fresh cream and milk. Its short ageing period enhances its freshness, resulting in a soft, balanced flavour that is easy to appreciate.
It is a cheese that shines in its simplicity: perfect served on its own with fresh bread, honey or preserves, or used to add extra creaminess to dishes and recipes.
