Cheese factory Turnario di Pejo
It is the last cooperative dairy in Trentino. To visit it in the morning and watch the daily routine of cheese making is an experience that teaches the difference between what is industrially produced and what is still being done as it once was. The cheese maker works every day to make natural cheeses, including casolét (a Slow Food presidium) and butter with goat's and cow’s milk brought here from the valley’s peasants.
